Sugar Snap Peas with Garlic, Hot Honey, & Hazelnuts

A quick, flavorful side that’s perfect for spring and summer. Sweet, crisp sugar snap peas get a garlicky, slightly spicy glaze and a satisfying crunch from toasted hazelnuts.



Ingredients


  • 3 ½ to 4 cups sugar snap peas, washed and trimmed

  • 1 tablespoon extra-virgin olive oil

  • 2 cloves garlic, finely minced

  • 1 tablespoon hot honey

  • Salt and freshly ground black pepper, to taste

  • 2 tablespoons roasted hazelnuts, roughly chopped

  • Optional: extra drizzle of hot honey to finish

  • Optional: 1 tablespoon chopped chives for garnish

Instructions


  1. Heat a frying pan over medium heat. If your hazelnuts aren’t already toasted, add them to the dry pan and toast for 1–2 minutes until fragrant. Remove from the pan and set aside.

  2. In the same pan, warm the olive oil.

  3. Add the sugar snap peas and stir-fry for 1–2 minutes, until they turn bright green and are just tender. Season with salt and pepper.

  4. Stir in the garlic and cook for about 30 seconds until fragrant.

  5. Drizzle the hot honey over the peas and toss for another minute so they become lightly glazed.

  6. Transfer the peas to a serving dish and sprinkle with the toasted hazelnuts.

  7. If desired, finish with an extra drizzle of hot honey and a sprinkle of chopped chives.
