Market Fresh Cilantro Lime Rice

This simple cilantro lime rice is the perfect fresh side dish for everything from taco night to homemade burrito bowls and grilled favorites. Made with market fresh cilantro from my farm, found at Pueblo Farmers Market, this recipe brings bright flavor and a fresh-from-the-farm touch to your table.
Ingredients
1 cup long-grain jasmine rice, rinsed and drained
1½ cups water
3 teaspoons extra-virgin olive oil, divided
1 small garlic clove, minced from Sweet Valley Farm or Windchime Farm at Pueblo Farmers Market
2 scallions, finely sliced from Sweet Valley Farm
1 teaspoon lime zest
¼ to ½ teaspoon sea salt, to taste
1½ tablespoons fresh lime juice
½ cup finely chopped fresh cilantro from Sweet Valley Farm
Pinch of red pepper flakes or ¼ diced jalapeño (optional)
2 tablespoons freshly chopped red onion (optional)
Instructions
In a medium saucepan with a lid, combine the jasmine rice, water, and 1 teaspoon of olive oil. Bring to a boil over medium-high heat.
Once boiling, cover and reduce the heat to low. Let the rice simmer for about 20 minutes, or according to your rice package directions.
Remove the lid and fluff the rice gently with a fork. Stir in the garlic, scallions, and lime zest until evenly combined.
Allow the rice to cool for about a minute before mixing in the remaining olive oil, sea salt, fresh lime juice, chopped cilantro, and optional red pepper flakes or jalapeño and red onion.
Stir well, taste, and adjust seasoning as needed before serving.
